雪耳红枣莲子糖水

Ben chin, this is specially for you 🙂 I love this dessert as this is really nice to drink and beneficial for skin 🙂

Ingredients:

30g of Lotus Nut (half the nut and get rid of stem in between) (莲子)

30g of Dried Longan Fruit (龙眼干)

30g of red dates (without seed) (红枣)

25g of snow fungus (雪耳)

some rock sugar or can use normal sugar

and of course, water (I used about three bowls of water)

Steps:

  1. Soak the dried snow fungus for half an hour or till soft to cut. Trim the hardened yellow part on the bottom and cut into smaller pieces.
  2. Rinse the other ingredients.
  3. Heat up a pot of water and bring to boil.
  4. Add the snow fungus, dried lotus, dried Longan fruit and red dates, reduce to low heat and cook for one hour or more, until all ingredients are soft and tender.
  5. Before serve, add some sugar (rock sugar) to your liking.
  6. I love to add some Goji berries before serving. Goji berries are good for your eyesight!

Another cold day

Another cold day. Hubby fell sick today! Not good.. too cold I guess. He said it is because he stopped drinking coffee two days ago! Haha..

I made 腐竹焖三层肉! This is my first time making this dish! Normally my mum will make this for us! Tasted decent but not as great as my mum’s cooking. I didn’t take a photo! I am getting adventurous with different dishes.

Another day I made chicken curry (M’sia style)! Tasted really good! I think I probably can start a small Malaysian eating shop? Might earn more money than doing my day job now!

Also made 莲子雪耳糖水 another day! Absolutely nice to drink in such a cold day!

Strawberry, White Choc Muffin

My first attempt to make muffins.. and it turned out to be quite good:)

I got the recipe from here.

These are all the ingredients:

300g (2 cups) self-raising flour
150g (2/3 cup) caster sugar
170g (1 cup) chopped white chocolate
2 teaspoons (10ml) lemon juice
250ml (1 cup) milk
125ml (1/2 cup) oil (we use peanut oil, but any mild-flavoured oil could be used)
1 large egg (we use eggs with a minimum weight of 59g)
200g berries (we used strawberries and raspberries)

Preheat oven to 190 degrees Celsius (170 degrees Celsius fan-forced).
Line 12 holes of a muffin pan (1/3 cup capacity holes) with patty/muffin cases. Similar to the one suggested in original recipe, I used paper-lined foil cases that measure 5cm across the base and 8cm across the top.

Whisk lemon juice, milk, oil and egg in a medium bowl until combined.

Mix self-raising flour, caster sugar and white chocolate together in large bowl. Stir in berries.

Gently stir wet ingredients into dry ingredients. Stop stirring once the ingredients are combined (do not over mix). The batter should be quite wet.

Divide mixture evenly between muffin cases.

I was so nervous because the mixture was still very wet. I was not sure whether I was doing the right thing!
Bake for about 22-27 minutes. To check whether muffins are cooked, press lightly on the centre of a muffin; if it springs back, it’s ready. A knife inserted into the centre of a muffin should come out without any batter attached.

Saturday Party with Friends

I was invited to a BBQ party at my colleague, Sherylin’s place. She is a cheerful and fun-loving Canadian girl. The party was co-hosted by her new flat-mate-Daniel (a handsome guy from Sicily, Italy–> I found him looks a bit like my best friend, suchin’s fiance.

Anyway, I also know Daniel’s gf – Mel. A really pretty gal who look a whole lot like 邵美琪 and prettier!! 🙂 She made this fantastic dish – Spinach Dip!! A new dish that I learnt today!

Spinach Dip

Ingredients

  • 1 cup mayonnaise mayonnaise
  • 1 cup sour cream (for both of these ingredients I use low fat, it is really a personal choice)
  • 1 (8 ounce) can water chestnuts
  • 1 (1 1/2 ounce) package vegetable soup mix (I use Knorr)
  • 1 (10 ounce) package spinach

    Directions

    1. Mix all the ingredients together the night before in a bowl and leave in the fridge.
    2. Either in a party bowl or a hollowed out round bread (sour dough, pumpernickel) scoop out the dip into it.
    3. Use the hollowed out bread by cutting into bite size or use with bread sticks or veggies.
  • Tastes really good and I googled it at home.. it is quite easy to make! I will try to make it next time!
